Zucchini, Lemon and Matcha Mousse
Here is a perfect recipe for summer, super healthy and so tasty: the Zucchini, Lemon, and Matcha Mousse!
I’m not gonna lie to you since I’ve discovered that we can make a mousse with zucchini, I became addict ahah. It’s so simple to make, it’s like a dream. Here, I made it with lemon, yuzu, and matcha tea. It makes a fresh, light and not-too-sweet dessert (as I like them).
I used, white zucchini for this recipe, they have very thin skin. You can use green ones, but be sure to peel them because their skin is thicker.
I think it’s possible to make the same mousse but instead of lemon and matcha, you could use red berries. It should be super tasty too 🙂 Tell me if you try it!
It’s very important to refrigerate the dessert all night long because otherwise, you’ll have something looking like more a pudding. It’s still tasty but the texture is not the one we’re looking for 😀

Zucchini and Lemon Mousse
Ingredients
- 630 g Zucchini
- Zests from 1 Lemon
- 30 g Lemon juice or 20g lemon juice and 10g yuzu juice
- 65 g White almond butter
- 1 tsp Matcha powder I use the one from the brand Anatae*
- 4 tbsp Coconut oil
- 4 tbsp Maple syrup
Instructions
- If you use green zucchini, peel them, if you use white or yellow ones you can keep the peel (just wash them).
In a blender, add all the ingredients together, remove the top cap to allow air go through when you blend. Blend on high speed for 5-6 minutes.- Pour into individual bowls and refrigerate for 12 hours (a night).
- Serve and enjoy!
