Sugar-free & Oil-free Granola

This Sugar-free & Oil-free Granola is one of my Home staple!
It’s deliciously crispy and super tasty! It’s perfect for both sweet and savory bowls. It can garnish all your chia pudding, or breakfast bowls but also your soups or add crunch to any kind of savory dish.
For the breakfast bowls, I usually create mine like this: chia pudding or plant-based yogurt (unsweetened), fruits or unsweetened applesauce, any nut butter, and this granola.

Sugar-free & Oil-free Granola
Ingredients
- 3 cups Oats
- 1 cup Grated coconut or puffed rice/quinoa, or more oat
- ½ cup Pumpkin seeds
- ½ cup Sunflower seeds
- ½ cup Almonds or cashews, walnuts, mixed nuts...
- ¼ cup Ground flaxseed or chia, psyllium husk, or a mix
- ½ cup Hot water
- ½ cup Unsweetened applesauce or pumpkin/sweet potato puree, banana puree (banana is very sweet and has a strong taste though)
Instructions
- Preheat your oven at 150° C / 300° F, fan-assisted.
- In a small bowl, add the ground flaxseeds with the hot water, stir and let rest a few minutes.
- Prepare a large baking tray with parchment paper. all the dry ingredients and stir by hands.
- Then, add the applesauce and the flax egg (swollen ground flaxseeds in water). Mix by hands to have everything wet.
- Compact the mixture in order to make a thick rectangle (4-5 cm or 1½-2 inch).
- Bake for a total of 40 minutes: after 15 minutes, separate the rectangle in big pieces. And stir to bake everything homogeneously. Then, place back in the oven and bake for 15 more minutes or until golden. Stir another time and place back into the oven for another 10 minutes to be sure everything is dry out.
- If some pieces are still wet, continue to bake for a few minutes. I usually turn off my oven and let the granola dry out like this.
- When the granola is cold, separate everything in chunks and store it into an air-tight box.
