Here it is, the Radishes Greens Pesto ! This sauce is creamy and has no bitterness, it matches with all your dishes (even the craziest).

This zero waste recipe is one of my favorite. Th radishes greens, usually very bitter, are now mild and smooth. How ? The trick is to soak the leaves for 30 minutes to1 hour in cold water. It will remove the bitterness out from them. Isn’t it magical? And what brings the creaminess here is the almond butter. You can replace it by any kind of nut butter, the creaminess will say but the taste might change a bit.

Actually, I use this recipe in many dishes : in pasta (obviously) or gnocchi. But also, in my grilled cheese (recipe here), as a pizza topping or even to marinate my plain tofu! Finally, in order tu use the whole bunch of radishes, you can make a radishes salad with this pesto sauce as a dressing :D. In short, you have many many options to use this sauce :).

Ingredients
  

  • Greens from one bunch of radishes⁣
  • 50 g raw Cashews activated if you have time
  • 30 g nutritional yeast
  • 1 tbsp white almond butter ⁣
  • 100 mL Extra-virgin Olive oil
  • 2 pinches Seasalt

Instructions
 

  • Wash carefully, the fresh radishes greens and leave them in water for 30mn to remove the bitter taste.
  • Strain and remove the excess of water with a salad spinner (or a kitchen towel).
  • ⁣Put all the ingredients in a blender and mix. It should be quite smooth. ⁣
  • Pour the pesto in an airtight jar and keep in the fridge. ⁣⁣
