Mexican-style Chickpea Wrap

These Mexican-style Chickpea Wraps are loaded with bold flavors! They are healthy and can be made gluten-free. Plus, they are perfect for a fresh, hearty and quick meal!
If there is one thing I love, it’s eating wraps: I love wraps. I can even tell you, long long time ago I was working in a fast-food (Summer job hehe) and I was the Queen of the Wraps :’D
These Mexican-Style Chickpea wraps are actually really easy to make: all you need is one pan and the ingredients!
These Vegan Wraps are:

- Packed with bold flavors
- Perfectly balanced for a healthy meal!
First, make the caramelized onions and then, the spiced chickpeas. Finally, pour into the (dirty) pan the tomato sauce, all the flavors and spices from the previous steps of the dish are going to infuse in it, so so tasty!

Summer Chickpea Wrap
Ingredients
Caramelized onions
- 1 cup White Onion
- 2 tbsp Maple syrup
- ½ tsp Smoked Paprika
- ½ tsp Ground Cumin
- 2 tbsp Water
- ½ tsp Garlic powder
- 2 pinches Salt
Spiced Chickpeas
- 1 can Cooked Chickpeas
- ½ tsp Smoked Paprika
- ½ tsp Garlic powder
- ½ tsp Ground Cumin
- ¼ tsp Chili powder
- ¼ tsp Ground Coriander
- ½ tsp Salt
Wraps
- 5 Tortillas wraps
- ½ Cucumber
- ½ Red Pepper
- Salad leaves I used Iceberg lettuce
- Whole Kernel Corn
- 2 Tomatoes
- 3 White Mushrooms
- Fresh herbs Coriander, Parsley...
- 1/2 can Peeled Tomatoes Whole or diced
Instructions
Caramelized Onions
- Finely slice the onion.
- In a warm pan, add 1 tbsp of olive oil and the sliced onion. Cook over medium heat, stirring frequently.
- Once the slices are translucent, add the spices, maple syrup and water. Cook over low heat during 5-7mn. Transfer to a small bowl.
Spiced Chickpeas
- In the same pan (don't wash it), add the strained/washed cooked chickpeas and the spices.
- Cook over high heat during 5-7 mn, stirring frequently. Transfer into a bowl.
Tomato sauce
- In the same warm pan (don't wash it), add the half of the tomato can.
- Cook over high heat during 7 mn, stirring frequently, scraping the bottom of the pan to loosen the flavor particles from the previous spices.
Build the Wrap!
- Have all the vegetables cut in sticks.
- In a tortillas wrap, add all the ingredients, fold the wrap and eat!
