Healthy Lentil Sloppy Joes

Healthy Lentil Sloppy Joes
The healthy Burger you need! These barbecue lentil Sloppy Joes is the one you have to try.
Ingredients
- 1 cup dried lentils it's better to soak them the day before in water before cooking.
- 1 yellow onion
- 3 garlic cloves
- 1 cup tomato sauce
- 1 cup vegetable broth
- 2 tbsp apple cider vinegar
- 2 tbsp tomato paste
- 1 tbsp brown sugar
- 1 tsp mustard
- 1 tbsp tamari (soy sauce)
- ½ tsp vegan Worcestershire sauce
- a few drops liquid smoke
- ¼ tsp red pepper flakes
- ½ tsp salt
- ¼ tsp gound black pepper
- Olive oil or non-dairy butter
Toppings
- red/white cabbage, pickled red onion, lettuce, avocado, mustard, ketchup...
- 4 hamburger buns
Instructions
- Cut the onion and the garlic cloves.
- Place a large saucepan on medium heat, coat the bottom with a tablespoon or two of olive oil. When hot, add the onion and cook for 5 minutes. Then, add the garlic and cook for 1-2 minutes.
- To the saucepan, add the soaked lentils, vegetable broth, tomato sauce, tomato paste, apple cider vinegar, brown sugar, mustard, Worcestershire sauce, liquid smoke, tamari, and red pepper flakes (everything except salt and pepper).
- Cook covered for 20 minutes, then remove the lid and cook for another 15 minutes or until the lentils are cooked (have a look at the lentils box). Don't forget to stir from time to time.
- Remove from the heat, add salt, and pepper, stir.
- Split and toast the hamburger buns.
- Serve the lentil mixture on the buns with the additional toppings you like.
Pleasantly complex recipe. Because my only allergy is dairy, I will use conventional Worcestershire. The combination of ingredients is masterful. I do hope more people visit your website
