 Tips for making this recipe

  • Do not blend too much the batter, it should stay thick and grainy.
  • These oat pancakes are delicious plain but you can also add blueberries or chocolate chips in the batter!
  • Do not cook these pancakes on too high heat. cooking them on medium-heat works the best.

Equipment

  • Blender or Food processor
  • Pan

Ingredients

  • 2 Bananas
  • 2 cups Rolled oats Be sure to take the Gluten-free ones if you're sensitive to gluten.
  • 1 ½ cup Plant-based milk I used oat milk
  • 4 Dates
  • 1 tsp Vanilla extract For more flavor
  • ½ tsp Baking powder
  • ½ tsp Baking soda
  • 1 tsp Cider vinegar

Instructions

  • Roughly cut the bananas and dates in large bits.
  • Add all the ingredients into the food processor (or blender).
  • Blend until thick and lumpy. Don't blend too much otherwise it will be hard to cook them.
  • Heat some oil in a large skillet/pan on medium heat and pour a small ladle of the batter into the pan. Let cook for about 2-3 minutes until little bubbles start to form on top, then flip and let cook for another minute or two.
  • Serve with your favorite toppings!
