Gluten-Free Oat Pancakes
These fluffy Gluten-free Oat Pancakes are made with 8 ingredients. As they take no time to make, they can be done every weekend!
Have fun and share them (or maybe not actually hehe)! You can add any topping you like such as maple syrup, raspberry coulis or my homemade chocolate&hazelnut spread.
Tips for making this recipe
- Do not blend too much the batter, it should stay thick and grainy.
- These oat pancakes are delicious plain but you can also add blueberries or chocolate chips in the batter!
- Do not cook these pancakes on too high heat. cooking them on medium-heat works the best.

Gluten-Free Oat Pancakes
If you're part of the pancake team, these are the perfect treat for any breakfast!
Equipment
- Blender or Food processor
- Pan
Ingredients
- 2 Bananas
- 2 cups Rolled oats Be sure to take the Gluten-free ones if you're sensitive to gluten.
- 1 ½ cup Plant-based milk I used oat milk
- 4 Dates
- 1 tsp Vanilla extract For more flavor
- ½ tsp Baking powder
- ½ tsp Baking soda
- 1 tsp Cider vinegar
Instructions
- Roughly cut the bananas and dates in large bits.
- Add all the ingredients into the food processor (or blender).
- Blend until thick and lumpy. Don't blend too much otherwise it will be hard to cook them.
- Heat some oil in a large skillet/pan on medium heat and pour a small ladle of the batter into the pan. Let cook for about 2-3 minutes until little bubbles start to form on top, then flip and let cook for another minute or two.
- Serve with your favorite toppings!
